First today, a hors d'oeuvres that you can decline according to you taste: lamb, beef, pork... even chicken if you'd prefer! I rather like the beef or chicken versions myself.
Just a piece of advice before adjourning to the kitchen: do not over-cook the meat. Just brown it in the fryer. Indeed, it will go on cooking once in the oven and risk being too dry.
